Beef and beer. They go together like freedom and happiness. If you've ever wanted to combine the two, listed below is one of my favorite recipes. Ensure you have some beer on hand to enjoy while cooking, because it helps to make things better.
Armen’s Epic Carne Asada
Serves 10-12
Marinade
1/2 large onion diced
1/4 cup garlic diced
1 kiwi peeled
4 jalapenos chopped
2 serrano peppers chopped
1/4 cup chopped scallions
Grated zest and juice of 1 orange
Grated zest and juice of 2 limes
1/2 bunch of fresh cilantro
1 tablespoon ground black pepper
1/4 cup New Mexican chili powder
2 tablespoon ground cumin
1/4 cup mirin
Good pinch of salt
1 tablespoon clove honey
12 oz of beer
The beers listed below, have all been used with great success for this recipe.
- Green Flash Brewing Mosaic Session IPA
- Ska Brewing Mole Stout
- Stone Brewing Arrogant Bastard
3 pounds skirt steak
Combine the marinade ingredients in a blender and puree.
Put the steak in a gallon ziplock bag and pour the marinade in until the meat is covered.
Place in fridge from 1 hour to 2 days
Now you are ready to grill.
After you have finished grilling, cut the beef into small pieces.
Eat the meat.
Drink some beer.
Be happy.
